Preheat the oven to 220°C/200°C fan/gas mark 7. Melt the butter (50 g) in a large saucepan over a medium heat. Once melted, stir in the flour (50 g) and cook for 1-2 minutes.

Slowly whisk in the milk (650 ml) until fully incorporated, then simmer until thickened, stirring often.

Tip in the white wine stock pot (1), Marmite cheddar (100 g) and emmental (100 g), remove from the heat and mix until fully melted.

Meanwhile, heat a large, dry frying pan over a medium-high heat. Add the spring onions (10) and cook for 6-8 minutes until charred. Remove from the pan and allow to cool before roughly chopping.

Place the gnocchi (1 pack) into a bowl and pour over boiling water. Leave to stand for 2 minutes, then drain.

Place the gnocchi, bechamel, peas (100 g) and spring onions into a baking dish. Scatter over the sesame seeds (2 tbsp) and bake for 25 minutes until golden brown.

Toss the chicory (2 heads) in the fig vinegar (2 tbsp), then serve alongside your gnocchi pie.
