Preheat the oven to 240°C/220°C fan/gas mark 9. Place the gammon (1 kg) onto a wire rack on top of a baking tray and sprinkle with a pinch of salt. Roast for 30 minutes.

Lower the heat to 220°C/200°C fan/gas mark 7. Remove the strings from the gammon and carefully remove the rind from the joint. Pop the rind onto the tray along with the joint.

Brush the joint liberally with the chilli jam (3 tbsp), and return to the oven for 50 minutes, until the joint is cooked through. Leave to rest for at least 10 minutes.

Meanwhile, add the sugar (2 tbsp), salt (2 tsp) and rice vinegar (2 tbsp) to a saucepan. Bring to the boil and then pour over the carrots (1) and cucumbers (1/2). Set aside to marinate.

Slice the gammon into 2cm slices. Spread a thin layer of mayo (4 tbsp) onto one side of the bun (6) and top with the ham and the crispy rind. Spread a thin layer of pâté (2 tbsp) onto the other side, and top with the pickled carrots, cucumber and coriander (10 g).
