Preheat the oven to 200ºC/180ºC fan/gas mark 6.

Heat a splash of oil (as needed) in a frying pan over a medium to high heat.

Add the diced bacon (2 rashers) and the sage (6) and fry for a few minutes. When the bacon is slightly crisp, reduce heat to medium.

Add the onion (1), season and cook for around 5 minutes until the onion is soft. Remove from heat.

Place the mince (500 g) into a mixing bowl and season generously.

Add the chestnuts (125 g), breadcrumbs (125 g) and orange zest (1) to the bowl, followed by the cooked onion and bacon mixture.

Mix thoroughly with your hands and then roll into balls about the size of a golf ball.

Bake on a non-stick baking tray for around 30 minutes until cooked through. Enjoy with your roast.
