M&S Distilled British vodka
25 mL
lemon juice
3 sprigs
thyme
100 mL
sparkling water
up to 120ml

Method

Step 1
Put the Collection single apiary pure British honey (7 g) and M&S Distilled British vodka (50 mL) into a mug. Stir well until the mixture is smooth, then pour it into a cocktail shaker. Add the lemon juice (25 mL) , 2 sprigs of thyme (2 sprigs) and a handful of ice. Shake well until cold.
Step 2
Strain into a tall glass and add a handful of fresh ice cubes. Top up with sparkling water (100 mL) , then stir and garnish with the remaining thyme (1 sprig) to serve.
