Method

Step 1
Mix the onion (1/2) , tomatoes (1 pack) , basil (25 g)  and olive oil (15 mL) in a bowl. Season with salt and pepper to taste.
Step 2
Heat a griddle pan and toast each slice of  bread (1 loaf) for up to 1 minute on each side until golden and marked. If you don’t have a griddle pan, lightly toast under a hot grill.
Step 3
Top the sourdough with the tomato mix.
Step 4
Use a spoon to pull apart the burrata (1) then spoon on top of the tomatoes.
Step 5
Season with salt and pepper to serve.
