Method

Step 1
Heat a generous splash of olive oil in a frying pan over a medium heat. Add the courgettes (3) and cook, stirring now and again, for 10 minutes, until softened. Add the garlic (4 cloves) , chilli (1) and lemon (1) and cook for a further 5 minutes. Allow to cool a little.
Step 2
Toast your Collection crafted sourdough baguette (1) .
Step 3
Serve the slow-cooked courgette on top of the sourdough toasts as a starter or canapé.
