M&S maris piper potatoes , peeled, roughly chopped
225 g
onions , roughly chopped
225 g
leeks , trimmed
sliced into 1cm slices
225 g
carrots , peeled, roughly chopped
225 g
swede , peeled, roughly chopped

Method

Step 1
Put the lamb (1 kg) into a large pan and pour over the stock (2 kg) . Bring to the boil, then reduce the heat and simmer for 1 hour.
Step 2
Add the M&S maris piper potatoes (225 g) , onions (225 g) , leeks (225 g) , carrots (225 g) and swede (225 g) , season with salt and pepper and cook for a further hour. Remove from the heat, cover, and set aside to cool. Put in the fridge overnight.
Step 3
When you are ready to serve, return the stew to the boil and cook for 15 minutes, or until completely heated through.
Step 4
Spoon the cawl into serving bowls and serve with crusty bread and Welsh cheese.
