Method

Step 1
Split the vanilla pods (2) .
Step 2
Put the coffee (55 g) in a screw-top jar with 800ml cold water and stir well.
Step 3
Put the lid on and set aside for 24 hours.
Step 4
Strain the coffee through a sieve and discard the coffee grounds.
Step 5
Line the sieve with a piece of muslin and strain the coffee again.
Step 6
Put the cream (200 mL) in a small pan.
Step 7
Split and scrape the seeds from the vanilla pods and add to the cream, along with the pods.
Step 8
Bring to the boil, then remove from the heat and leave to infuse for 20 minutes.
Step 9
Strain into a jug and whisk in the milk (200 mL) and maple syrup (60 mL) .
Step 10
Fill a glass with ice cubes (to taste) pour in the coffee until two-thirds full.
Step 11
Top up with the cream mixture and serve.
