Method

HIDE IMAGES
Step 1
Preheat the oven to 180°C/160°C fan/gas mark 4 and line 2 baking sheets with baking parchment.
Step 2
In a food processor, pulse the flour (250 g) , cardamom (8) and icing sugar (100 g) once or twice to combine. Tip in the butter (150 g) and pulse until the mixture looks like fine breadcrumbs.
Step 3
Add the orange zest (1) , egg yolk (1) and water (5 mL) , then pulse again until a dough forms.
Step 4
On a lightly floured surface, gently press the dough into a flat disc. Wrap in clingfilm and chill for 20 minutes.
Step 5
On a floured surface, roll out the dough to 3mm thick, then use a cutter to cut out around 24 biscuits. Lift onto the baking sheets and pop in the freezer for 10 minutes to firm up, then bake for 7-8 minutes, until golden.
Step 6
Meanwhile, melt the white chocolate (100 g) in a heat-proof bowl over a saucepan of simmering water. When the biscuits are ready, decorate them in criss-cross patterns. Allow to cool.
