garlic , grated

chilli flakes

fennel seeds

Collection British pork sausages , roughly chopped
550 g
M&S chunky Mediterranean-style vegetable mix
15 mL
balsamic vinegar
2 tins
(800 g)
M&S Italian chopped tomatoes
1 bunch
parsley , chopped
to taste
parmesan , grated

Method

Step 1
Cook the pasta (400 g) according to the pack instructions and drain, reserving the cooking water. Meanwhile, heat the olive oil (15 mL) in a saucepan over a medium-high heat, then add the garlic (1 clove) , chilli flakes (2 g) and fennel seeds (2 g) .
Step 2
When the spices begin to sizzle, add the sausages (1 pack) and fry for 3 minutes, breaking up the pieces with a wooden spoon, until they begin to caramelise.
Step 3
Add the Mediterranean-style veg (550 g) , season with salt and pepper, and continue to cook until slightly softened.
Step 4
Add the balsamic vinegar (15 mL) , stir and let it bubble away, then add the chopped tomatoes (2 tins) and around ¼ can of cooking water from the pasta.
Step 5
Simmer over a medium heat for 10 minutes until thickened. Season with salt and pepper to taste. Use a little more of the pasta cooking water to loosen the sauce if it looks too dry.
Step 6
Toss the cooked pasta through the sauce with the fresh parsley (1 bunch) , then serve with grated parmesan (to taste) and black pepper. For a vegan version, substitute the sausages with Plant Kitchen sausages, and leave out the parmesan.
