potato gnocchi
1 pack
M&S chunky Mediterranean-style vegetable mix
100 g
blue stilton , crumbled
4 g
Italian herb seasoning
to taste
parmesan
30 mL
olive oil
1 bag
(80 g)
M&S rose verde salad
as needed
balsamic dressing
or Honey and mustard dressing
(optional)

Method

Step 1
Preheat the oven to 200°C/180°C fan/gas mark 6.
Step 2
Add the oil (30 mL) , gnocchi (1 pack) , vegetables (1 pack) , crumbled stilton (100 g) , Italian herb seasoning (4 g) and salt and pepper to a large roasting tin. Make sure everything is well mixed together and that there’s enough space for everything to be in one layer.
Step 3
Generously grate parmesan (to taste) over everything and pop in the oven for around 30 minutes, until the vegetables are roasted, the gnocchi is golden brown and crispy and the cheese has melted.
Step 4
Scoop into bowls and finish with some more parmesan (to taste) , black pepper and a little olive oil. Serve with the salad (1 bag) topped with balsamic dressing (as needed) or any other dressing you like.
