Method

Step 1
Preheat the oven to 180°C/200°C fan/gas mark 6. Drizzle a little olive oil into the corners of a large roasting tray, then add the orzo (300 g) , frozen vegetables (1 bag) and 500ml of the stock (700 mL) . Cook in the oven for around 30 minutes, stirring halfway through – and adding the remaining stock if it looks too dry – until the stock has absorbed and the orzo is tender.
Step 2
Meanwhile, heat a frying pan over a medium heat and toast the pine nuts (50 g) until golden and fragrant.
Step 3
Remove the tray from the oven and mix in the pesto (1 jar) and lemon juice (1) . Season with salt and pepper to taste.
Step 4
Divide between serving dishes and top each with a scattering of basil (1 bunch) , a few toasted pine nuts, a good grinding of black pepper and a grating of grana padano (to taste) or plantbased cheese, if you like.
