Charred sourdough crostini with green sauce, dressed tomatoes, feta and basil

Ingredients
2 large slices M&S signature sourdough
5 tbsp olive oil
Handful flat leaf parsley
Handful dill
1 clove garlic
2 tbsp capers
Juice and zest of half a lemon
Sea salt
1 punnet ripened M&S collection tomatoes
1 tbsp olive oil
1 tsp dijon mustard
1 tsp red wine vinegar
Sea salt and black pepper
20g feta cheese
Handful basil leaves
Method:
Begin by making your green sauce, place the 5tbsp olive oil, flat leaf parsley, dill, garlic, capers and lemon zest and juice in a blender and blend to a smooth paste before seasoning with sea salt. Set aside in the fridge
Now to dress the tomatoes, slice each in half and place in a bowl. Add the 1tbsp olive oil, dijon mustard, vinegar, sea salt and black pepper to the bowl mix until evenly coated. Allow the tomatoes to sit in the dressing for 5 mins so the salt anf vinegar can get to work.
While they are marinating, place a griddle pan on the heat until smoking hot and add the slices of sourdough. Char on both sides for 1 minute before placing on the plate.
Smear the green sauce across the charred bread before topping with the dressed tomatoes. Crumble the feta cheese on top and finish with some torn basil leaves.
