60g Scottish porridge oats
240ml cashew milk
1 apple, grated
40g blueberries
15g toasted hazelnuts, roughly chopped
1 banana, sliced
A spoonful of coconut yoghurt and a drizzle of honey, to serve
Soak the oats, milk, apple and blueberries in the fridge overnight. In the morning, sprinkle with the nuts and top with the banana. For a richer texture add a scoop of coconut yoghurt and a drizzle of honey if you like. Serves 2.
