When it comes to mid-week meals, it’s all about quick-fix ingredients that help you get dinner on the table without fuss. Our Cook with M&S pea and mint mash is handy when time is short – it makes a vibrant, potato-free side served with pan-fried fish or chicken, or a main meal in itself stirred through risotto for a zingy flavour burst.
Plus, it helps you pack more veg into dishes such as Chris Baber’s easy homemade fishcakes. Switch up your weekend brekkie with pumpkin spice pancakes. This delicious autumnal treat is topped with sticky apples and a drizzle of our Cook with M&S honey and pumpkin spice glaze.
Serves 4
135g plain flour
1 tsp Cook with M&S pumpkin spice seasoning
1 tsp baking powder
½ tsp salt
2 tbsp caster sugar
130ml milk
1 large egg, lightly beaten
2 tbsp melted butter, plus extra for cooking
8 apples, sliced
1 tbsp Cook with M&S honey and pumpkin spice glaze, plus extra for drizzling
Sift the flour, Cook with M&S pumpkin spice seasoning, baking powder, salt and caster sugar into a large bowl.
In a separate bowl or jug, lightly whisk together the milk and egg. Next add the melted butter and whisk again.
Pour the milk, egg and butter mix into the flour mixture. Beat until the batter is smooth.
Heat a non-stick frying pan over a medium heat and melt a knob of butter. Add a ladle of mix to the pan and cook.
Once bubbling, turn over and cook until both sides are golden. Repeat until you have used all the mix.
For the apples, melt a knob of butter in a frying pan. Add the apples, season with salt and cook for a few minutes.
Add a tablespoon of the Cook with M&S honey and pumpkin spice glaze and cook until the apples are caramelised and softened.
Top the pancakes with the apples and some extra glaze.
Love a pumpkin spice latte? Try our idea for a pumpkin spice hot chocolate, toppped with cream and pumpkin spice popcorn. Add half a teaspoon to your favourite hot chocolate powder to a mug, pour in hot milk and stir. For the popcorn, coat plain popcorn in sugar and melted butter, then sprinkle on some pumpkin spice seasoning and mix. Bake in the oven at 120°C until caramelised, then top the hot chocolate with whipped cream and the popcorn.

Add the sundried tomato paste to our Cook with M&S panko breadcrumbs and use as a crispy coating for meat, fish or veggies. Or try baking the sundried tomato breadcrumbs in the oven then stirring into spaghetti that’s been flavoured with anchovies, sundried tomato paste, parsley and parmesan
