Method

Step 1
Place the rice (120 g) , almond drink (800 mL) , half the maple syrup (30 mL) , vanilla (6 g) and 200ml water in a large pan. Stir to combine then cook for 45-60 minutes, stirring now and again, until soft and creamy.
Step 2
Meanwhile, make the roasted plums. Preheat the oven to 180˚C, then place the plums (8) , cut-side up, in a roasting tin. Sprinkle with sugar (50 g) and nestle the cinnamon sticks (2) in the tray. Bake for 30 minutes, flipping the plums halfway through.
Step 3
Top the cooked rice pudding with the plums, the remaining maple syrup (30 mL) and the almonds (to taste) .
