For the meringue

3
M&S free-range mixed size eggs
whites only
170 g
caster sugar

For the berry cream

1 handful
strawberries
1 handful
raspberries
1/2 tub
(500 mL)
silky-smooth custard
1/2 tub
(300 mL)
cream

Method

HIDE IMAGES
Step 1
Whisk the egg whites (3) until soft peaks are formed.
Step 2
Slowly add the caster sugar (170 g) 1tbsp at a time and continue to whisk until the sugar has dissolved.
Step 3
Spoon the meringue onto a baking tray lined with parchment and bake in a preheated oven at 120C for 3 hours or until the meringues easily peel away from the paper. Cool and set to one side.
Step 4
Place the raspberries (1 handful) in a bowl and crush using a fork, slice the strawberries (1 handful) and tumble them through the raspberry crush mix.
Step 5
In a separate bowl, whisk the whipping cream (1/2 tub) until soft peaks are formed and fold in the vanilla custard (1/2 tub) .
Step 6
Assemble the Eton mess by crushing the meringue and layering everything in your desired serving bowl.
