Collection sourdough

The secret ingredient in our Collection sourdough is time. Each loaf takes over 30 hours to make, allowing it to develop an incredible flavour and irresistible texture. The loaves are made with stone-milled heritage wheat flours from Marriage’s, a family producer that’s been milling flours for nearly 200 years – these ancient grains were first seen in the UK as early as 1620. The techniques used to make our sourdough are all about going back to basics. The bread is allowed to prove slowly, and nothing artificial – like commercial yeast – is added. It’s folded by hand several times, which develops the protein in the flour, creating an open texture and signature air bubbles, then baked on Italian marble for a deep, dark crust – total bread bliss.

Sourdough recipe inspiration

A celebration of British seasonal produce, these little toasts pack a big flavour punch. Our sourdough tastes great fresh for up to three days, and will be perfect for toasts like these for up to five days. To make these meat-free, leave out the prosciutto and swap the parmesan for a veggie alternative

  • 80g prosciutto (optional)
  • 250g ricotta
  • ½ lemon, zest and juice
  • 40g parmesan
  • 1 pack (150g) M&S Select Farms mixed radishes, trimmed and thinly sliced
  • 200g peas (fresh or frozen)
  • 2 tsp white wine vinegar
  • 4-6 slices Collection crafted signature sourdough
  • 1 clove garlic
  • Handful mint, leaves picked, to garnish
  1. Preheat the oven to 200°C/180°C fan/gas mark 6. Line a baking sheet with foil.
  2. Put the prosciutto onto the baking sheet and bake in the oven for 10-15 minutes, until golden and very crisp. Allow to cool before breaking into shards.
  3. Whisk the ricotta and lemon zest until smooth. Stir in the parmesan and season with salt and pepper.
  4. Toss the sliced radishes in a bowl with the lemon juice and a sprinkling of salt.
  5. Boil the peas in salted water for 2 minutes, until tender. Drain and combine with the white wine vinegar and a splash of olive oil. Mash with the back of a fork to break up some of the peas.
  6. Preheat the grill to medium. Grill the sourdough for 2 minutes on each side, or until golden. Rub each slice with the garlic clove while still hot, then allow to cool. Cut any larger pieces in half.
  7. To assemble, pile the ricotta onto the sourdough halves followed by the peas, radishes and crispy prosciutto, if using. Finish with a little fresh mint.

Meet our sourdough maker

Our Collection sourdough loaves, baguettes and rolls are made to an exclusive recipe at Village Bakery, an award winning bakery in North Wales run by brothers and third-generation bakers Robin and Christien Jones.

The sourdough “mother” was developed by Village Bakery’s second-generation family baker Lucas, who trained for seven years in Germany before being granted “master baker” status. Making our sourdough is like making beer – it takes patience, knowledge and enough time to get it just right.

The bakery is surrounded by six acres of woodland maintained by North Wales Wildlife Trust. It’s open to the public, and is home to owls, buzzards and endangered grizzled skipper butterflies. The bakery is run using energy-efficient ovens and with minimal waste – offcuts from the dough are used to make future loaves.

Bring summer holidays home with our new Italian-made Collection layered gelato. With five flavours to choose from, there’s something for everyone!

Collection Cornish gold butter

Made by the Rodda family in Cornwall using milk from local cows, this butter is churned the old-fashioned way and patted and wrapped by hand.

It’s just like butter used to be: rich, gold and marbled, with a hint of Cornish sea salt. Spread it on crumpets, use it to sauté prawns or fish, or toss it in ravioli with a little sage and lemon juice.
