Method

Step 1
Preheat your oven to 200°C/180°C fan/gas mark 6.
Step 2
Halve the courgettes (4) lengthwise and remove most of the flesh with a spoon. Finely chop the flesh and set aside. Bake in the oven for 25 minutes.
Step 3
While the courgettes are baking, time to make your mince. Place a non-stick pan over a medium heat and drizzle in 1tsp olive oil. Once it’s hot, add the M&S More Than mince (1 pack) to the pan and fry for 5 minutes.
Step 4
Then add in the chopped courgette, garlic paste (10 g) and M&S rose harissa paste (15 g) . After another 5 minutes, add the M&S Italian cherry tomatoes in tomato juice (8) and season everything well. Keep cooking until your mince is crispy.
Step 5
After the courgettes have been in the oven for 25 minutes, remove them, turn them flesh side up, stuff them with your More Than mince mixture, crumble over the Plant Kitchen Greek-style cubes in brine (16) and pop back in the oven for 10-15 minutes.
Step 6
When they’re ready, spoon over the chimichurri (60 mL) and serve with a fresh green salad, if you like.
