Method

Step 1
Add the courgettes (300 g) and onion slices (1) to a bowl of iced salted water and soak for 1 hour.
Step 2
Put the raw apple cider vinegar (500 mL) , chilli flakes (2 g) , pink peppercorns (3 g) , mustard seeds (2 g) , turmeric (2 g) , caster sugar (150 g) and sea salt (35 g) into a saucepan and bring to the boil until the sugar has dissolved. Switch off the heat and allow to cool.
Step 3
Drain the courgettes and onions and pat dry with kitchen towel.
Step 4
Put the courgettes and onion slices into a sterilised 1 litre pickling jar or two 500ml jars, pressing down as you go, then pour over the pickling liquid. Chill in the fridge for a week, then enjoy with cheese, cold cuts or salad.
