Method

Step 1
Add the watercress (1 bag) to a bowl and then arrange the Jersey Royal, pea and mint salad (1 pack) (placing the pea shoots to one side) on top of the watercress.
Step 2
Scatter the honey-roast salmon flakes (1 pack) and spring onion slices (2) over the salad.
Step 3
Top with the reserved pea shoots, season with salt and pepper, squeeze over the juice of the lemon (1) and drizzle with olive oil.
