Fool-proof turkey gravy

Tom Kerridge’s foolproof turkey gravy 

No Christmas dinner is complete without lashings of gravy – it brings the whole meal together, so getting the right balance of flavours is key

Ingredients

  • 2 onions, roughly chopped
  • 2 carrots, roughly chopped
  • 2 sticks celery, roughly chopped 
  • 1 bulb garlic, cut in half 
  • 1 turkey of your choice
  • 200g chestnut mushrooms, roughly chopped 
  • 50g dried porcini mushrooms, softened in boiling water 
  • 2 bay leaves 
  • Sprig thyme 
  • Splash sherry (optional) 
  • 2 tbsp runny honey 
  • 2 tbsp soy sauce 
  • 2-3 tbsp plain flour 
  • 500ml M&S chicken stock 
  • Splash red wine vinegar or Worcestershire sauce

Method

  1. Put the onions, carrots, celery and garlic into a roasting tray that can also be heated over the hob. Place your turkey on top and roast according to the pack instructions, then remove the turkey, transfer to a platter and cover with foil. Set aside.
  2. Place the tray with the vegetables and fat over a medium-high heat on the hob. Tip in the chestnut mushrooms and dried porcini and stir well. Simmer for 2-3 minutes, until the mushrooms are cooked.
  3. Add the bay leaves, thyme and sherry, if using. Add the honey, the soy sauce, the flour and the chicken stock. Cook, whisking as it simmers, for 4 minutes, until thickened.
  4. Bring to the boil, then simmer for 4-5 minutes. Add the red wine vinegar or Worcestershire sauce, season to taste, then pass the gravy through a sieve – it should have a silky texture.
