  1. Preheat the oven to 170°C/325°F/gas 3
  2. Line two baking trays with greaseproof paper
  3. Melt 150g unsalted butter and allow to cool slightly
  4. Mix 125g light brown sugar and 100g caster sugar in a bowl
  5. Pour the melted butter over the sugar and mix
  6. Beat in 2 tsp vanilla extract, 1 egg and 1 egg yolk until light and creamy
  7. Add 300g plain flour and ½ tsp bicarbonate of soda and mix until blended
  8. Fold in 300g chocolate chips
  9. Drop onto the baking trays using an ice-cream scoop, leaving a few cms between each
  10. Bake for 15-17 minutes, until the edges are lightly browned
  11. Remove from oven and cool on wire racks
