Crispy gnocchi with Mediterranean veg and blue cheese

This is quick and easy comfort food at its very best. Using ready-made gnocchi, you can simply throw all the ingredients into a baking tray and roast. The result is a mix of sweet Mediterranean vegetables, salty bites of blue cheese and gnocchi which is crispy on the outside and chewy in the middle.

Ingredients

  • 1 pack, M&S potato gnocchi
  • 1 pack, Mediterranean-style vegetable mix
  • 100g mature blue stilton, crumbled
  • 1tbsp Italian herb seasoning
  • A generous grating of Parmesan
  • Salt and pepper
  • 2tbsp olive oil
  • 1 bag rosa verde salad
  • Salad dressing of choice – we love honey and mustard

Method

  1. Preheat the oven to 200°C/180°C fan/gas mark 6.
  2. Add the oil, gnocchi, vegetables, crumbled stilton, Italian herb seasoning and salt and pepper to a large roasting tin. Make sure everything is well mixed together and that there’s enough space for everything to be in one layer.
  3. Generously grate Parmesan over everything and pop in the oven for around 30 minutes, until the vegetables are roasted, the gnocchi is golden brown and crispy and the cheese has melted.
  4. Scoop into bowls and finish with some more Parmesan, black pepper and a little olive oil. Serve with a dressed salad.
