Blood orange frozen yoghurt with crushed pistachios

A healthier take on ice cream that puts vivid blood oranges centre stage

Ingredients

 

  • 100ml blood orange juice, and zest of 1 blood orange 
  • 500g Greek yoghurt
  • 3 tsp maple syrup
  • 2 tbsp pistachios, chopped

Method

  1. In a bowl, mix together the blood orange juice, two-thirds of the zest, the yoghurt and the maple syrup.
  2. Pour the mix into a freezer-safe dish and freeze for 3 hours, whisking every 40 minutes, until set.
  3. Remove the frozen yoghurt 30 minutes before serving to allow it to soften slightly.
  4. Scoop into bowls and top with chopped pistachios and the remaining blood orange zest.
