radishes , thinly sliced

hazelnuts , toasted, roughly chopped
1 handful
mint , torn
plus extra to serve

lemon

100 mL
M&S unfiltered extra virgin olive oil

Method

Step 1
Cook the pasta (300 g) according to the packet instructions. Add the petits pois (200 g) for the final 2 minutes of cooking, then drain and rinse under cold water for a few seconds to refresh.
Step 2
Add plant-based Greek cubes (1 pack) , radishes (200 g) , hazelnuts (100 g) , mint (1 handful) and lemon juice (1) to a large salad bowl along with M&S unfiltered extra virgin olive oil (100 mL) . Gently toss everything together, making sure everything is nicely coated in the olive oil and lemon juice.
Step 3
Divide between serving dishes and scatter over the remaining mint.
