spaghetti
1 jar
(180 g)
M&S sundried tomato paste
8
M&S anchovy fillets in extra virgin olive oil
crushed into a paste with back of knife
80 g
panko breadcrumbs
1 handful
parsley , chopped
1 handful
parmesan , grated

Method

Step 1
Cook spaghetti (320 g) according to the packet instructions in salted boiling water.
Step 2
Toast the breadcrumbs (80 g) over a medium heat.
Step 3
When the pasta is al dente, drain the water, reserving a good ladleful of pasta water.
Step 4
In a saucepan over a low heat, add the anchovy paste (8) , sundried tomato paste (1 jar) , parsley (1 handful) and parmesan (1 handful) together with the spaghetti and mix together. Add enough pasta water to create a smooth and silky sauce.
Step 5
Divide into four bowls and finish with the toasted breadcrumbs and more parmesan.
