Ingredients: 50 gram white sugar; 50 millilitre water; 100 millilitre tequila; 60 millilitre lime juice; 1 teaspoon lemon curd; 1 lemon; 2 sprig thyme

Step 1

Gently heat white sugar (50 g) with water (50 mL) in a saucepan until the sugar has dissolved. Remove from the heat and allow to cool.

Step 2

Fill a cocktail shaker with ice, then add M&S Distilled silver tequila (100 mL) , lime juice (60 mL) , lemon curd (5 g) and all the cooled sugar syrup. Shake well.

Step 3

Strain into two cocktail glasses (coat the rims in salt first), and garnish with a wedge of lemon (1) and a sprig of thyme (2 sprigs) .
