Salmon is a family favourite, and our responsibly sourced Scottish salmon is flaky and meaty with a deliciously succulent texture.
Try these easy ideas for your Good Friday fishy feast:
Try chef Chris Baber’s easy recipe for pan-fried sea bass fillet with zingy tomato salsa. Got leftover salsa? It’s great used to top tacos or scrambled eggs.
Ingredients (serves 2)
1/2 a mango, peeled and finely diced
200g M&S Select Farms tomatoes, finely diced
1 lime, zest and juice
4 tbsp extra virgin olive oil
A small bunch of fresh coriander, chopped
1/2 red onion, peeled and finely diced
1 tbsp olive oil
2 sea bass fillets
Mix the mango, tomatoes, lime zest and juice, extra virgin olive oil, coriander and red onion in a bowl, season and set aside. Season the sea bass fillets with salt and pepper.
Heat a frying pan over a medium heat, add the olive oil, then place the sea bass fillets skin-side down. Cook for 6 minutes, until golden. Turn the fish onto the flesh side and cook for a further 1 minute, then remove. Top each fillet with a generous spoonful of salsa and serve.

Ingredients (serves 4)
3 red onions, cut into wedges
3 peppers, roughly chopped
1 tbsp olive oil
4 tbsp Cook with M&S Moroccan paste
4 cod fillets
100g pitted olives
50g feta
A small bunch of flat-leaf parsley
Preheat the oven to 180°C/160°C fan/gas mark 4. Add the onions and peppers to a 40 x 25cm roasting tray. Add the olive oil and 2 tbsp of the Cook with M&S Moroccan paste, then toss everything together to coat.
Roast for 15 minutes, until the vegetables have softened. Spread ½ tsp of the remaining Cook with M&S Moroccan paste over each cod fillet, and add to the tray along with the olives and feta.
Return to the oven for 10 minutes, until the fish is cooked through. Season the fish to serve and finish with a sprinkle of chopped parsley.
