Harissa cauliflower wraps

Ingredients

 

  • 1 large cauliflower, cut into florets
  • 3 tbsp olive oil
  • 90g M&S harissa paste
  • 1 pack (8) M&S tortilla wraps
  • M&S Greek-style yogurt, to serve
  • M&S sweet & crunchy salad bag, to serve
  • 1 pack M&S pomegranate seeds, to serve
  • M&S pickled red onions, to serve

Method

  1. Preheat the oven to 160°C fan/180°C/gas mark 4.
  2. Place the cauliflower florets onto a non-stick baking tray and drizzle with 1 tbsp olive oil and 2 tbsp harissa paste, then season with salt and pepper. Mix together to coat the cauliflower evenly, then add 50ml of water to the tray.
  3. Bake the cauliflower for 25-30 minutes until caramelised on the outside and tender on the inside.
  4. Mix 2-3 tbsp of the remaining M&S harissa paste with 1-2 tbsp olive oil to make a spicy harissa dressing.
  5. Warm the tortilla wraps in a frying pan or griddle pan.
  6. To serve, spread some yoghurt onto each warm tortilla, top with a small handful of salad and a few florets of roasted cauliflower. Drizzle with some harissa dressing, then scatter with pomegranate seeds and a few pickled red onions. Wrap up and enjoy!
