Gas or electric
Most standard hobs are gas or electric, and are usually compatible with all types of metal pans.
Induction
If you have an induction hob (which doesn’t get hot, but heats pans via a magnetic induction coil), you should choose pans made from magnetisable metal such as cast iron or steel. Pure aluminium or copper pans will not heat up unless the base is bonded with a magnetic metal.
Ceramic
Pans with flat, heavy bases – such as cast iron – are best for ceramic (glass-topped) hobs. If you have a halogen hob, steer clear of pans with shiny bottoms, as they can interfere with the heating element.
Aga
For an Aga with a solid hotplate, you should choose thick, heavy pans with flat bases that can withstand constant high temperatures.

Avoid using metal utensils and scouring pads on non-stick pans, as this can damage the non-stick coating
Try not to overheat your pans – too much heat can damage the non-stick coating
Leave your pans to cool before washing in hot water. For stubborn food residue, soak them before washing
