Tom Kerridge’s Valentine’s surf and turf 

The sirloin steaks with garlic butter hearts from the M&S Valentine’s Dine In are guaranteed to impress your date! Here, they’re paired with juicy prawns in truffle butter

Ingredients

  • 2 sirloin steaks with garlic butter hearts (from the M&S Valentine’s Dine In)
  • 1 sprig rosemary
  • 2 sprigs thyme
  • 30g butter
  • Your choice of M&S Valentine’s Dine In sides, such as asparagus spears or triple-cooked chips, to serve

    For the truffle prawns
  • 50g butter, softened
  • 2 tsp M&S truffle pesto
  • 150g M&S raw Honduran king prawns
  • ½ lemon, zest and juice
  • 1 tsp chives, finely chopped
  • 1 tsp dill, finely chopped

 

Method

  1. Drizzle 1 tbsp olive oil over the steaks and season on both sides with salt and pepper. Heat a large non-stick frying pan over a high heat. When the pan is smoking hot, hold the steaks fat-side-down in the pan and cook for 1 minute to render the fat. When the fat is crispy, lay the steaks in the pan and cook for 2-3 minutes on each side, depending on their thickness.
  2. Remove the pan from the heat and add in the herbs, followed by the butter. As the butter melts, use it to baste the steaks. After a couple of minutes, remove the steaks from the pan and transfer them to a plate. Pour over the butter and set aside.
  3. To make the prawns, add the butter and the truffle pesto to the pan and place over a medium-high heat. Tip in the prawns and cook for 1-2 minutes on each side, or until pink. Add the lemon zest, then remove the pan from the heat, squeeze in the lemon juice and mix in the chopped herbs. Season with salt and pepper.
  4. Serve the steak with the prawns and the heart-shaped garlic butter on top. Serve with your choice of M&S Dine In sides.
