Pear and almond salad with stilton

This delicious salad is a gorgeous amalgamation of flavours - creamy Stilton sets off the sweetness of the pear to perfection. All M&S Stilton is produced by Tuxford & Tebbutt in Leicestershire – one of just five licensed creameries in the world producing this PDO (Protected Designation of Origin) cheese

Ingredients

For the dressing:

  • 1 tsp Dijon mustard
  • 1 tsp runny honey
  • 1 tbsp white balsamic or white wine vinegar
  • 3 tbsp light olive oil

For the salad:

  • 100g whole almonds
  • 2 tbsp runny honey
  • 1-2 chicory or baby gem lettuce
  • heads, leaves separated
  • 60g watercress
  • 4 ripe Conference pears, halved and cored
  • 200g Stilton (or other blue cheese)

Ready in: 15 minutes

Serves: 4

Method

  1. Heat the oven to 220°C/425°F/gas 7 (200°C for fan ovens). Whisk together the dressing ingredients and season to taste.
  2. Spread the almonds in an even layer on a baking tray. Drizzle over the honey and sprinkle with a little salt. Transfer to the oven for 5-7 minutes until caramelised. Remove from the oven, scrape onto greaseproof paper and leave to cool.
  3. Divide the chicory or lettuce and watercress equally among 4 plates. Slice the pear halves and add to the plates. Crumble over the Stilton and scatter with the nuts. Serve with dressing to drizzle over.
