Bruschetta with posh tomatoes

Amp up this classic Mediterranean starter with our posh tomatoes and spicy paprika paste


  • 250g red and yellow Santini tomatoes
  • 230g vine-ripened Claret tomatoes
  • 200g vine-ripened Tomalini tomatoes
  • 200g smoked paprika, chipotle chilli & lime paste
  • 1 ciabatta bread, sliced thickly
  • 2 tbsp parmesan shavings, to serve
  • 1 small handful basil leaves, to serve

  1. Thickly slice the ciabatta bread.
  2. Heat the oven to 150°C/300°F/gas 2 (130°C for fan ovens).
  3. Cut the larger tomatoes in half or into quarters.
  4.  Put the tomatoes in a large roasting tray, in a single layer, and mix with the paste.
  5. Roast in the oven for 1 hour 30 minutes.
  6. Grill the ciabatta slices until brown and crisp all over.
  7. Spoon over the tomatoes and their juices, and garnish with Parmesan shavings and basil
