Smoked salmon pasta

A dish that looks impressive, tastes amazing, but is deceptively simple to make, smoked salmon pasta is your go-to dish for a quick-fix lunch or weeknight dinner

Ingredients

  • 150g linguine
  • 1 large handful spinach
  • 4 tbsp low-fat crème fraîche
  • 1 tbsp Dijon mustard
  • 1/2 lemon, zested and juiced
  • 1/2 tsp dill tops
  • 150g smoked salmon, torn into strips

Ready in: 15 mins

Serves: 2

Method

  1. Zest and juice the lemon. Tear up the smoked salmon.
  2. Cook the pasta according to the packet instructions then drain, leaving 1 tbsp water in the pan.
  3. Stir through the spinach until just wilting.
  4. Add all the remaining ingredients and stir through until coated in the sauce.
