Pasta Bake

Whether you need a lunchtime energy boost or a quick supper, you can't go wrong with this pasta bake. Smoky bacon and a rich tomato sauce are a mouth-watering combination, while a cheesy topping is a scrumtious finish


  • 1 small red onion, finely chopped
  • 4 slices unsmoked bacon, chopped
  • 1 stick celery, finely sliced
  • 1 tbsp olive oil
  • 350 g tomato and balsamic vinegar pasta sauce
  • 150 g penne pasta, cooked
  • 25 g dried breadcrumbs
  • 1 tbsp parsley, finely chopped
  • 50 g cheddar cheese, grated

  1. Finely chop the small red onion. Chop the unsmoked bacon. Finely slice the celery. Cook the penne pasta. Finely chop the parsley. Grate the cheddar cheese.
  2. Gently fry the onion, bacon and celery in the oil until softened.
  3. Add the pasta sauce plus a splash of water. Stir through the cooked pasta and transfer to an ovenproof dish or individual dishes.
  4. Mix the breadcrumbs with the parsley and sprinkle over the pasta.
  5. Scatter the cheese generously over the top and bake at 200°C/400°F/gas 6 (180°C for fan ovens) for 10-15 minutes.
