Mexican beef fajita salad

This colourful dish is an exotic meal to serve up at a dinner party or as a quick weeknight supper. Made with protein-packed quinoa, it’s a salad that will both fill you up and keep you fuelled


  • 1 corn on the cob
  • 2 tbsp olive oil
  • 250g pack microwave white and red quinoa or long-grain rice
  • 4 tbsp Mexican red salsa
  • juice 1 lime
  • 250g extra-lean minute steaks
  • 2 tsp fajita seasoning
  • 140g bag bistro salad
  • 1 avocado, peeled, stoned and sliced
  • ½ x 25g pack fresh coriander, leaves only
  • ½ small red onion, finely sliced

  1. Cook the corn in boiling water for 5-6 minutes until tender; drain. Put 1 tbsp of oil in a ramekin and use a little to brush the sweetcorn.
  2. Heat a griddle pan until hot and cook the corn for 3-5 minutes, turning, until lightly charred. Leave to cool.
  3. Meanwhile, microwave the quinoa or rice according to pack instructions. Tip into a bowl and stir through 2 tbsp salsa and half the lime juice. Leave to cool
  4. When ready to serve, rub the steaks with the seasoning, then brush with the remaining oil in the ramekin. Heat the griddle pan until hot and cook the steaks for 1-2 minutes each side, until cooked to your liking. Set aside to rest.
  5. Toss together the salad leaves with the quinoa or rice, then arrange on a platter. Stand the corn on the cob upright on a board and, using a knife, strip the kernels from the cob. Scatter over the salad.
  6. Slice the steak into strips and add to the salad, followed by the avocado, coriander and red onion. Mix together the remaining 1 tbsp olive oil, lime juice and salsa to make a dressing and drizzle over the salad to serve.
