M&S winemaker Belinda Kleinig was delighted to discover this beautifully complex Sauternes, made when ripe Sémillon and Sauvignon Blanc grapes are left on the vine to attract ‘noble rot’. This dehydrates the grapes and leaves behind just the intense nectar, which when pressed, is fermented in oak barrels to develop its flavours further.
