For the crab

For the fritters

broad beans , podded
90 g
peas
100 g
crème fraîche

self-raising flour

parsley , chopped

M&S hollandaise sauce

Method

Step 1
Bring a pan of water to the boil. Blanch the broad beans (200 g) and peas (90 g) until tender.
Step 2
In a small bowl, dress the Collection British white crab meat (200 g) with lemon (1) , olive oil (15 mL) and chives (1 handful) . Set aside.
Step 3
Add the crème fraîche (100 g) , M&S free-range mixed size eggs (2) , lemon (1) , self-raising flour (125 g) and milk (100 mL) to a large bowl. Mix to form a smooth batter. Fold in the broad beans, peas and parsley (1 handful) and season with salt and pepper.
Step 4
Heat 1 tbsp vegetable oil in a large frying pan. Drop spoonfuls of the fritter mix, cooking in batches until golden brown on each side.
Step 5
Poach the M&S free-range mixed size eggs (4) to your liking and heat the M&S hollandaise sauce (1 pack) according to pack instructions.
Step 6
Serve the fritters topped with the crab meat, poached eggs and hollandaise, and serve the lemon (1) wedges and watercress (80 g) on the side.
