Kick off the weekend in splendid style with an indulgent but simple-to-prepare Eggs Royale, a luxurious twist on the classic Eggs Benedict, says Style & Living’s Becky Sunshine.

Weekend brunch is just about my favourite meal. After a tiring, busy week it’s the moment to slow the pace down, enjoy a leisurely late morning and cook something extra special, but super easy. Even better than that, it’s a great way to get Mother’s Day off to a lovely start. One possibility is Eggs Royale, a simple yet delicious combination of toasted muffin with lashings of delicate smoked salmon and a perfectly runny poached egg, neatly finished with silky hollandaise sauce, a crack of black pepper and a few fresh chives. All the ingredients are available in store, and the best bit is that it’s quick to prepare. But be warned, you’ll want more than one.
