      This intriguing white wine is actually made from red Pinot Noir grapes. It mixes aromas of red berries with spice, honey and floral notes, while in the mouth it is surprisingly rich and full-bodied, with melon and cherry flavours harmonised by soft toasty oak.

      About this bottle: Produced in the North Downs of Surrey, this unique wine was made by experienced wine consultant John Worontschak from 100% Pinot Noir grapes. While not the easiest grape to grow, Pinot Noir is a remarkably versatile variety that can produce a range of wine styles, yet outside of sparkling wine production it’s rare to see a white wine made from the grape. Indeed, Litmus’s wine could well be the UK’s first ever white Pinot Noir. The fruit was sourced from 25 year old vines growing on sunny south-facing slopes. Once harvested, the grapes were very gently pressed to ensure the juice didn’t come into contact with the red skins, then each parcel was fermented separately in French oak barriques for eight months. Additionally, the wine stayed on its lees for a further eight months before bottling to extract as much depth and complexity as possible.
