Autumn might be on the way,but it’s not stew season just yet – get set for a last-minute spice adventure and enjoy the heat fora little longer

The end of summer can be cut short all too soon by less than glorious weather. But even on the most drizzly days, my craving for heat always persists – and this Moroccan-spiced lamb shoulder is an absolute saviour. Smoked over oak, zingy with a touch of chilli and apricot, and utterly indulgent come Sunday lunch, the sweet meat is only made better by a scattering of sharp pomegranate seeds and a refreshing herb dressing. And with British Lamb Week (1-7 September) now upon us, I can’t think of a better way to send off summer in style.
