THE SUPER-ZESTY MARGARITA

Try this tasty twist on your favourite cocktail using our Cook with M&S preserved lemon paste

With temperatures soaring this weekend and your summer staycation hopefully in full swing, cool down and chill out by shaking up this preserved lemon margarita – packed full of sunshine flavour. To make two cocktails, gently heat 50g sugar with 50ml water in a saucepan until the sugar has dissolved. Remove from the heat and allow to cool. Fill a cocktail shaker with ice, then add 100ml tequila, 60ml lime juice, 1 tsp Cook with M&S preserved lemon paste, and all the cooled sugar syrup. Shake well, strain into two cocktail glasses (coat the rims in salt first), and garnish with a wedge of lemon and a sprig of thyme.
