  1. Preheat the oven to 225°C/425°F/gas 9
  2. Add a splash of oil to each cup in a 12-cup muffin tin
  3. Place the tin into the oven for 15 minutes until the oil is hot
  4. Beat 2 large eggs, 100g plain flour, 100ml milk together in a bowl
  5. Season with salt and pepper
  6. Remove the tray from the oven and pour the mixture evenly into the compartments
  7. Cook for 12-15 minutes, or until risen and golden
