Raise a glass to Scotland’s favourite bard with this cocktail recommendation from one of Edinburgh’s top barmen

“Whisky is one of the few spirits that holds its own alongside unconventional ingredients, which is why I love working with it,” says Fabio di Silvestro. “For something a little special, try my take on a whisky sour – it’s a modern classic that’s easy to make at home. You’ll need 50ml of peaty single malt whisky, 25ml of lemon juice, three teaspoons of honey and 2cm of peeled fresh ginger. Grate the ginger in a shaker, add the whisky, honey and lemon juice and shake vigorously before straining to remove the ginger and serve over ice.”
