Don’t get me wrong, a perfectly bronzed bird with all the trimmings is a thing of seasonal joy, but there’s always room for something new when it comes to Christmas lunch. For me, a joint of beef cooked until it’s meltingly tender and cuts like butter when you sink a knife into it is my idea of festive food heaven. Carefully selected and prepared cuts, like our new boneless rib of British beef rolled around a slick of porcini and roasted garlic butter make a decadent alternative to traditional turkey. Try it roasted over a layer of sliced red onions and halved garlic bulbs – mash up the cooked veg with the meat juices for an indulgent gravy.
