this Christmas your sweetest yet”

Spiced mince-pie cheesecake

Serves 6

30g pecans
30g pumpkin seeds
A pinch of ground cinnamon
3 tbsp butter, melted
12 dark chocolate and orange biscuits, crushed
90ml mince-pie cream liqueur, plus 2 tbsp extra to serve
80g mascarpone
150ml whipping cream, whipped to soft peaks with 2 tbsp icing sugar

To make the crumb, blitz the pecan nuts, pumpkin seeds and cinnamon in a food processor. Set aside.

Mix the melted butter with the crushed biscuits and press down into a 20cm round cake tin.

Stir the mince-pie cream liqueur into the mascarpone and gently fold in the whipped cream. Be careful not to overwork the mixture. Spoon on top of the base and leave to chill.

Just before serving, sprinkle with the crumb and drizzle with a little extra mince-pie cream liqueur.
