Put the gammon (1 kg) into a large, lidded saucepan, cover with cold water and bring to a boil.

Once boiling, drain the water, discard and refill with more cold water, along with the onion (1), carrot (1), bay leaves (2) and peppercorns (6). Bring to a boil. Reduce the heat and simmer for 40 minutes.

Remove the gammon from the pot and leave to one side (save the stock to use for soups and stews, if you like).

Preheat the oven to 200°C/180°C fan/gas mark 6. Line a baking tray with aluminium foil and pat the gammon dry with kitchen towel.

Remove the rind and score the fat in a criss-cross diamond pattern.

Put the gammon into the centre of the baking tray and cover with foil, leaving the scored fat exposed.

Mix the honey (2 tbsp), brown sugar (1 tbsp) and mustard (2 tbsp) together and brush half of it over the gammon. Roast for 10 minutes, then remove from the oven and brush with the remaining glaze.

Roast for a further 15 minutes, or until the fat is golden brown. Cover with foil to rest for at least 15 minutes before carving.
