Bring a large saucepan filled with hot water to a boil. Add the potatoes (200 g) and cook for 7 minutes, adding the green beans (200 g) for the final 3 minutes. Drain together and leave to cool.

Bring another pan filled with hot water to boil. Carefully lower the eggs (2) into the water and simmer for 6.5 minutes. Run under cold water and then gently peel and slice in half.

Add the Dijon mustard (1 tsp), anchovy fillet (1), red wine vinegar (2 tbsp) and 2 tbsp olive oil to a blender and blitz until smooth.

Spoon the sesame seeds (6 tbsp) onto a plate then push the tuna steaks (2) onto the sesame seeds to form a crust. Repeat on the other side of the tuna.

Heat a large griddle pan over a medium-high heat. Brush with olive oil and then add the tuna steaks. Season with salt and pepper and cook for 5-7 minutes. Allow to rest for 2 minutes, then thinly slice.

Toss the potatoes, green beans, tomatoes (2) and lettuce (1 head) with the dressing, and serve in bowls topped with the halved eggs and sesame-crusted tuna steaks.
