Winter citrus and whipped ricotta toast

Ingredients

M&S ricotta
•
8 slices
M&S sunflower and spelt bread , toasted
•

M&S Collection blood oranges , peeled, sliced
•

clementines , peeled, sliced
•

pink grapefruit , peeled, sliced
•
to taste
M&S Collection single apiary pure British honey
•
1 bunch
small thyme , leaves picked

Cooking Instructions

1. 
Use a stand mixer or wire whisk to whip the ricotta (1 pot) for 2 minutes until airy.
2. 
Spread the ricotta onto each slice of toast (8 slices) and arrange the orange (2) , clementine (2) and grapefruit slices (3) on top.
3. 
Drizzle over some M&S Collection single apiary pure British honey (to taste) and top with a few thyme leaves (1 bunch) .
